Description: Dried ají chilies are fruity and aromatic, unlike any other category of chilies. They’re fried until crispy along with shallots and garlic, they lend this crunchy chili oil topping a sweet, fruity, caramelized warmth. The heat level is moderate, and the allium ratio leans more into shallot than garlic. We use Jamaican habanero as well for its fruitiness and restrained heat.
