Hamokiri designed for use on Hamo — Japanese Daggertooth Pike Conger Eel. Hamo has very fine bones throughout the flesh that is cut finely. The technique utilizes the significant weight behind the fine edge to cut into the flesh and very small bones cleanly while leaving the skin intact.
Knife was used minimally in a demo. The weight of the knife has cause some slight damage to the box while in transit.
